ROC and Food Pioneers work together on sustainability in hospitality education

Food Pioneers and the teaching team of the ROC Culinary Arts and Hospitality programmes have been working together since last year to strengthen the role of sustainability within the curriculum. Through two inspiration sessions, working sessions and a student feedback session, they explored how the subject can be incorporated into the new qualification frameworks.


A significant part of the students’ education takes place at restaurants and other work placement companies in Almere. These organisations supervise students during their internships and therefore also contribute to the development of the programmes.


The annual work placement partner day

On 15 June, the participating work placement companies came together for the ROC’s annual partner day at Stadslandgoed De Kemphaan. The teaching team presented the latest developments within the programmes and shared the progress made so far.


Albert Kooy, founder of Dutch Cuisine, spoke about five principles for a more sustainable menu: culture, health, nature, quality and value. These principles provide practical guidance for how students learn to work with ingredients and develop menus during their studies.


Lunch was provided by Almere-based catering company Geworteld and included local vegetables, Dutch beans and miso.



Local examples

During a tour of Stadslandgoed De Kemphaan, farmer Tineke spoke about collaboration with educational institutions and local entrepreneurs, including around the weekly farmers’ market.


Jim and Marinke from Geworteld hosted a miso tasting and showed how miso can also be used in products such as biscuits and ice cream. The day ended with drinks, during which students opened oysters supplied by partner Sligro.


The partner day gave the ROC, work placement companies and local entrepreneurs an opportunity to exchange experiences and discuss developments within the programmes. The insights gathered will be used in the next stage of the work on the qualification frameworks.
